Recipe:
½ cup of red lentils
1 ¼ cup of water or vegetable stock
2 tablespoons of olive oil or sunflower oil
¼ teaspoon of salt
½ teaspoon of coriander powder
1 ¼ tablespoon chopped cilantro
Option: you can add some other veggies as desired. It’s great with carrots and celery.
Directions:
In a saucepan, heat oil and add spices, cooking for 1-2 minutes until fragrant.
Add salt and red lentils and stir until well coated. Add water or vegetable stock and cilantro.
Bring to boil, lower the heat, and cover.
Simmer for 15-20 minutes until the lentils are soft
Serve in a bowl top it off with cilantro and ENJOY!
