Cauliflower Rice and Quinoa Green Salad

Directions:
Rinse the quinoa and cook quinoa over medium heat. Once it boils, bring heat to low and let it cook for 15-20 minutes.
If you have whole cauliflower, you can place it in the food processor to create the cauliflower rice or buy a bag of cauliflower rice.
Chop the kale and sauté with the onions. Add salt and a pinch of pepper to taste.
Add the cauliflower rice, zested lime, and lime juice.
Steam the broccoli for 5-10 minutes.
Once everything is cooked, mix the broccoli with the quinoa, cauliflower rice, and kale.
Serve in a bowl and ENJOY!
