Cauliflower Rice and Quinoa Green Salad

Recipe:

  • ½ cup of quinoa

  • ½ cup of chopped onions

  • 1 cup of cauliflower rice

  • ¼ cup of broccoli

  • ¼ lbs of chopped kale

  • ½ whole lime

  • ½ teaspoon of lime zest

  • ¼ of salt

  • 1 cup of water

Directions:

  1. Rinse the quinoa and cook quinoa over medium heat. Once it boils, bring heat to low and let it cook for 15-20 minutes.

  2. If you have whole cauliflower, you can place it in the food processor to create the cauliflower rice or buy a bag of cauliflower rice.

  3. Chop the kale and sauté with the onions. Add salt and a pinch of pepper to taste.

  4. Add the cauliflower rice, zested lime, and lime juice.

  5. Steam the broccoli for 5-10 minutes.

  6. Once everything is cooked, mix the broccoli with the quinoa, cauliflower rice, and kale.

  7. Serve in a bowl and ENJOY!
